There’s nothing quite like a warm, homemade apple pie with a flaky crust and sweet, spiced filling. This classic recipe is perfect for any occasion, from family gatherings to cozy fall evenings.
Ingredients
For the Pie Crust:
- 2 ½ cups (315g) all-purpose flour
- 1 cup (226g) unsalted butter, cold and cubed
- 1 tsp salt
- 1 tbsp sugar
- 6-8 tbsp ice water
For the Apple Filling:
- 6-7 medium apples (Granny Smith, Honeycrisp, or a mix)
- ¾ cup (150g) granulated sugar
- ¼ cup (55g) brown sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 2 tbsp cornstarch or flour
For Assembly:
- 1 egg (for egg wash)
- 1 tbsp milk
- 1 tbsp coarse sugar (optional)
Instructions
Step 1: Make the Pie Crust
- In a large bowl, mix flour, salt, and sugar.
- Add cold, cubed butter and cut it into the flour using a pastry cutter or food processor until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Divide the dough in half, shape into discs, wrap in plastic, and chill for at least 1 hour.
Step 2: Prepare the Apple Filling
- Peel, core, and slice apples into thin slices.
- Toss apple slices with sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and cornstarch. Let sit for 15-20 minutes.
Step 3: Assemble the Pie
- Preheat oven to 400°F (200°C).
- Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Press into the pan.
- Add the apple filling, leaving behind excess juices.
- Roll out the second disc and place it over the apples. Cut slits for ventilation or create a lattice top.
- Whisk egg and milk, then brush over the crust. Sprinkle with coarse sugar if desired.
Step 4: Bake the Pie
- Bake at 400°F (200°C) for 20 minutes.
- Reduce temperature to 375°F (190°C) and bake for another 35-40 minutes, until the crust is golden and filling is bubbling.
- Let cool for at least 2 hours before slicing.
Step 5: Serve & Enjoy!
Serve warm with vanilla ice cream or whipped cream. Enjoy! 🍏✨
