Classic Apple Pie Recipe 🍏🥧

There’s nothing quite like a warm, homemade apple pie with a flaky crust and sweet, spiced filling. This classic recipe is perfect for any occasion, from family gatherings to cozy fall evenings.

Ingredients

For the Pie Crust:

  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (226g) unsalted butter, cold and cubed
  • 1 tsp salt
  • 1 tbsp sugar
  • 6-8 tbsp ice water

For the Apple Filling:

  • 6-7 medium apples (Granny Smith, Honeycrisp, or a mix)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (55g) brown sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 tbsp cornstarch or flour

For Assembly:

  • 1 egg (for egg wash)
  • 1 tbsp milk
  • 1 tbsp coarse sugar (optional)

Instructions

Step 1: Make the Pie Crust

  1. In a large bowl, mix flour, salt, and sugar.
  2. Add cold, cubed butter and cut it into the flour using a pastry cutter or food processor until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  4. Divide the dough in half, shape into discs, wrap in plastic, and chill for at least 1 hour.

Step 2: Prepare the Apple Filling

  1. Peel, core, and slice apples into thin slices.
  2. Toss apple slices with sugar, brown sugar, lemon juice, cinnamon, nutmeg, salt, and cornstarch. Let sit for 15-20 minutes.

Step 3: Assemble the Pie

  1. Preheat oven to 400°F (200°C).
  2. Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Press into the pan.
  3. Add the apple filling, leaving behind excess juices.
  4. Roll out the second disc and place it over the apples. Cut slits for ventilation or create a lattice top.
  5. Whisk egg and milk, then brush over the crust. Sprinkle with coarse sugar if desired.

Step 4: Bake the Pie

  1. Bake at 400°F (200°C) for 20 minutes.
  2. Reduce temperature to 375°F (190°C) and bake for another 35-40 minutes, until the crust is golden and filling is bubbling.
  3. Let cool for at least 2 hours before slicing.

Step 5: Serve & Enjoy!
